Because Summer is so close I can taste it, lets celebrate with an oh so summertime salad.
Southwest Salad:
4 cups romaine lettuce (chopped)
1 cup black beans
1 cup roasted corn
1 red pepper (chopped)
1/2 red onion (chopped)
1 avocado (diced in large chunks)
1 cup cilantro
Throw it all in a bowl and mix well
Dressing
1/4 cup olive oil
1/4 cup Lime Juice
2 garlic cloves (crushed)
1/2 cup Veganaise
1 tsp cayenne
1/4 cup cilantro
Salt to taste
For the dressing, put all ingredients in to a food processor or blendtec until well mixed. Serve cold with dressing on the side.
