Raw Pad Thai – Vegan

This was…ridiculously yummy!  The perfect quick, healthy and nutrient rich meal.  Sometimes it can be tough to eat raw and feel super full and satisfied.  This one fits the bill!

Things you need: Spiralizer

Raw Pad Thai

Ingredients: 

3 Medium Zucchini
8 oz Bean Sprouts
1 Container Extra Firm Tofu
2 Tbsp Sesame Seeds
1/2 Cup Fresh Cilantro Chopped
1 Cup Snap Peas
4 Scallions – Finely Sliced (include white parts)

Sauce: 

1/2 Cup Peanut Butter
1/2 Cup Lime Juice
2 Tbsp Tamari/Soy Sauce
2 Tbsp Honey
1 Tbsp Fresh Ground Ginger
3 Tbsp Water

Spiralize the Zucchini and mix in a bowl with bean sprouts, snap peas, cilantro, scallions and sesame seeds.

Cut tofu into 1/2 inch cubes.

****If you aren’t stuck on “raw” you can also saute the tofu with a little bit of the sauce, oil and garlic for 5 minutes. ****

Mix all ingredients in sauce and pour over vegetables and serve with some extra cilantro on top.
