Kitchari. It’s what’s for dinner. This is a super easy one-pot meal perfect for Meatless Mondays!1 cup short grain brown rice
2/3 cup whole mung beans
5 cups of water
1 tsp mustard seed
1 tsp cumin seed
1/8 tsp fenugreek
1 tsp turmeric

In a pot add the mung beans, brown rice and water together, bring to a boil and then lower to a simmer. Cook until the mixture is a porridge consistency, you may want to add water ( you want it to be thick and smooth, not terribly sticky)

On the side saute the spices in 1/4 cup of oil over a medium heat. Start with the mustard seeds and cumin seeds, when they start to pop, add the fenugreek. Cook for about 2 mins and add it the rice and mung beans. Add the turmeric and season with salt and pepper. My kids love peas and pretty much any greens chopped up and thrown in.
