So, I’m not sure what the soup kick I’m on is all about but here goes another ๐ I looked over on my counter the other day and noticed some roma tomatoes needing to be used. I’m not big on just eating raw tomato and figured making a quick soup would be the fastest most delicious way to use them up.
This was quick and so, so good.ย
7-8 roma tomato
1/2 onion, medium dice
3 cloves garlic finely minced
4 tbsp of olive oil
1 veggie boulion
3/4 cup water
fresh basil
Concasse the tomatoes. Score the bottom of the tomatoes, drop them in boiling water till the skins pop a bit. Remove promptly and drop in to an ice bath. Peel the tomatoes, seed them then dice them. This may sound like a lot of effort but its really is only about a 10-15 process. Once this is finished saute the garlic and onion then add the tomato. Let this cook about 10-15 minutes then add the water. Let cook another 5-10 minutes. Add all ingredients to the blender and give a good buzz. This alone will make the soup nice and creamy and light. Put the soup back in the pot and season with salt and pepper maybe a pinch of sugar and some fresh basil.
